CALIFORNIA FRUIT CAKE
¾ cup sifted flour |
2 cups chopped pitted dates |
¼ teaspoon baking powder |
1½ cups chopped dried apricots |
½ teaspoon baking soda |
1½ cups walnut pieces |
½ teaspoon salt |
1½ cups flaked coconut |
¾ cup brown sugar |
3 eggs |
1 teaspoon vanilla extract |

Mix flour, baking powder, soda and salt into a bowl. Add brown sugar, dates, apricots, walnuts and coconut and mix well. Add well-beaten eggs and extract and blend well. Put batter into an 8x8 greased foil pan and smooth top carefully. Bake in a preheated 300° oven about an hour. Cool 15 minutes, remove cake from pan.
